-Makes 12 muffins-
1.5 cups oat flour – I used 120 grams (note : to make oat flour – grind oatmeal up in the blender, food processor or coffee grinder)
3 servings of vanilla whey protein powder
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/4 tsp sea salt
1/2 cup stevia in the raw
1/3 cup mini semi-sweet chocolate chips (I used 4 servings, 56 grams)
1 cup canned pumpkin
1/3 cup unsweetened applesauce
4 egg whites
1 tsp vanilla
Preheat oven to 350 degrees F. Mix together dry ingredients in one bowl. Mix together wet ingredients in another bowl. Add the wet mixture to the dry and stir until blended. Scoop batter into a sprayed muffin tin and/or lined with paper liners.
Bake for 15-16 minutes until a toothpick comes clean.
Macros per muffin :: 9.3 protein/12.7 carbs/2.6fat
